Playing with five forwards should be the worst option available on the game, given its massive unbalance.
Regardless of that, here you go:- long ball
- forward falling back to defense
- midfielders holding position
- defenders defending deep
- offside trap ON
- attacking (70) style
- one-touch football (80-100) tempo

I like to go with wing play when facing defenses using offside trap.

Considering only the formation: 4-2-3-1.
However, it won't work if the opponent plays with passing game nor if it defends with offside trap. -

How do you set the line tactics when lining up a 5-2-3 formation?

Since he defends with no offside trap and given his formation, consider going with a 4-5-1 Shoot On Sight on a more defensive approach. That should contain his attack a little more and help you with scoring, since his defenders will give more space to shoot from afar by not defending with offside trap.
